Why does most decaf taste so bad?

What is the Swiss Water Process exactly?
It's a water-based method for removing caffeine from green coffee beans without using any chemical solvents. Green beans are soaked in hot water that has already been saturated with coffee flavor compounds. Because the water is already full of flavor, it can only absorb what's missing — caffeine. The caffeine migrates out of the beans into the water, and the beans retain their flavor. The water is then filtered through activated carbon to remove the caffeine, and the cycle repeats. The result is a bean that has lost 99.9% of its caffeine and kept essentially everything else.
Is it really chemical-free? I've read things about how regular decaf is made.
You've read correctly. The two most common decaffeination methods use methylene chloride or ethyl acetate — both are industrial solvents. The FDA permits trace amounts in finished coffee, but trace amounts are not zero. Swiss Water Process uses nothing that wasn't already in the bean. The only inputs are water, temperature, and time.
